Black Bean Pizza

MV5274In my quest to uphold my 2013 New Year's resolution of no sugar or white flour in my diet, I found this recipe for Black Bean Pizza.  I have made it several times and it is quick, easy and delicious!  Enjoy!


1-15 ounce can Black Beans, drained

1 cup frozen corn kernels

1 tomato, chopped into small pieces

1/2 cup chopped scallions

1 avocado, diced into small pieces

1 tsp. ground cumin

1 tsp. chili powder

1/2 tsp. salt

1/4 tsp. pepper

1-2 cups shredded reduced fat cheddar cheese

Whole wheat pizza crust (I used one by Pillsbury in the pop can.  Very good)


Preheat oven to 400 degrees.  In a medium bowl, combine beans, corn, tomatoes, scallions, cumin, chili powder, avocado, salt and pepper.  Work your pizza crust onto a greased baking sheet.  Top crust with the black bean mixture, sprinkle with cheese.  Bake approximately  15-20 min. Makes 8-1 piece servings.
